If you’re always on the move and never seem to have time to make your lunch, we have the solution you've been searching for! These three recipes are simple to make and perfect for you to make for lunch on busy days.

Tomato Feta Pasta Salad

This Tomato Feta Pasta Salad is a really easy recipe that requires no reheating. Make it on the weekend and enjoy it for lunch all week! Start by cooking some fusilli pasta in a large pot. Bring the water to a boil and add some salt and olive oil to keep the noodles from sticking. Let the pasta boil for 12 minutes, then set aside. To make the dressing, add sun dried tomatoes, olive oil, vinegar, capers, garlic, salt and pepper in a food processor and mix until smooth. Pour it over the pasta then toss in all the other salad ingredients including chopped tomatoes, black olives, feta cheese and sundried tomatoes. Pack it up into reusable containers and you’re ready to go!

Crisp Tuna Cabbage Salad

If you love sandwiches, this Crisp Tuna Cabbage Salad is going to be your new favourite. Begin by draining 1 can of tuna in a medium bowl, then shred it with a fork. Add chopped cabbage, mayo, chives, and Greek yogurt and a little bit of salt and pepper if needed. Grab two slices of your favourite bread and assemble your tuna sandwich. This is super quick and perfect if you’re tight on time.

Quinoa Fruit Salad

You’re going to fall in love with this refreshing and protein-packed Quinoa Fruit Salad! First, you’re going to have to cook 2 cups of quinoa and set it aside to cool. While you wait, prepare the vinaigrette by mixing olive oil, apple cider vinegar, sugar, lemon juice and zest in a small bowl. In a large bowl mix blueberries, strawberries, mango and quinoa and pour the vinaigrette all over. Garnish it with fresh mint leaves and serve, or pack it up for lunch. Yummy!
